Amino acid composition of the proteins of soybean varieties Lee and Hood and chemical constants of their oils.

Abstract:
Amino acid composition of the proteins of two soybean varieties Lee and Hood and chemical constants of their oils were investigated. Both the varieties contained very little methionine, were rich in lysine (2.04% and 1.92%) and the amount of glutamic acid (8.04% and 7.76%)being highest in both the varieties. Amino acid distribution in the protein of the two varieties, in general, was, however, uniform. Chemical constants such as; Iodine value, saponification value, free fatty acid value, ReicherMeissl value and Potens-ke value of the oils of the soybean variety Lee and Hood were 124, 126, 191, and 192, 0.6 and 0.75, 0.7 and 0.6, 3.4 and 3.8 respectively.
