Abstract:
Utilization of coconut meal, which is a by-product of the coconut oil industry, for making edible grade coconut flour containing about 20-25% protein is discussed. Its use, particularly in sweet dishes, appreciably increases the protein value of the dishes. A few recipes of acceptable food combinations containing coconut flour are given, namely biscuits, kheer, sweets, beverages, balls, Cookies and macarooni.
