Comprehensive study of physicochemical evaluation of refined sunflower oils from multiple brands in the local markets of Lahore

Abstract:
In the present study refined sunflower oils of different brands were collected from the local market of Lahore and physicochemical properties were assessed to determine their quality as awareness for the consumers. Collected samples were analyzed for Vitamin A, rancidity, Density, Specific gravity, Viscosity, moisture content, refractive index, Acid value, Peroxide Value, Free fatty Acids, Color, Saponification, Smoke Point, Flash Point, and Iodine Value. Results revealed that oil samples coded ES, DS, SS, CS, GS, and KS partially met the specified criteria for parameters such as acid value (0.03mgKOH/g0.25mgKOH/g), Smoke Point (180°C -240°C), Flash Point (315°C-325°C), Color (20Y-10Y, 0.1R), Saponification (173.91mg KOH/g-199.155mg KOH/g) free fatty acids (1.18%-0.2%), iodine value (106.405g I2-132.162g I2/100g oil), and viscosity (0.55763 cp-0.82016 cp), The peroxide value of oil samples coded as ES, SS, and CS (21.911, meq O2/Kg, 28.05 meq O2/Kg, and 14.34 meq O2/Kg) respectively are higher than the recommended values. The moisture content of samples CS, ES, and DS (0.5%, 0.3%, and 0.9%) respectively are also above the limits. The Saponification value of Sample SS (140mg KOH/g) is below the specified criteria. The qualitative assessment of Vitamin A fortification of oil samples indicates the presence of vitamin A which is high in the CS sample as it indicates deep green color as compared to other tested samples. The observed physicochemical parameters were compared against the Codex Alimentations Commission of FAO/WHO standards and the specifications of Pakistan standards. Additionally, differences in the qualitative and quantitative characteristics including antioxidant properties of refined and raw oil samples are under progress. This study highlights the need for long-term experiments or analyses to ascertain the persistence of these variations in sunflower oil quality characteristics. The findings provide valuable insights for consumers in selecting high-quality sunflower oil products and may aid the food industry in developing more standardized processes for sunflower oil production.
