Abstract:
Seven indigenous and foreign wheat varieties were analysed for their nutritional values and for comparison with the standards laid down by the government for ash, gluten (dry), acidity and moisture. It was found that foreign varieties, as well as indigenous, compare favourably with the standards laid down, except Mexi-Pak, which had a higher protein content than the best of local variety.
