Abstract:

Characterization of the structural building unit of onion pectic acid was investigated. This was achieved by oxidation of pectic acid hydrolysate with nitric acid, oxidative hydrolysis of pectic acid with bromine in the presence of hydrobromic acid, esterification and reduction of a chromatographically isolated galacturonic acid sample. Enzymic digestion of pectic acid with pectinase was also performed.
