Abstract:
Six triticale and wheat cultivars (Triticale V 1236, NIAB-177, Lu-26, SA-75, Yokora, Pothwar), as well as commercial samples of rice, corn, millet seeds, (bajra, sorghum), rice bran, rice polishings and cowpeas were analysed for Fe. Zn, Mn and Cu by atomic absorption. Wheat (SA-75) and triticale (V 1236) were milled into major components such as high grade flour, low grade flour, shorts and bran. Protein and trace element levels of each fraction were determined. It was observed that concentrations of Fe. Zn, Mn and Cu in triticales and wheats varied. Among corn, millet seeds and cowpeas, the bajra samples contained relativity higher amounts of Zn and Mn. Milling process significantly affected the distribution pattern of protein and microelements in various fractions (P
