Variability and relationship among various physicochemical characteristics of wheat.

Abstract:
Physicochemical characteristics and nutrient composition of some wheat mutants/cultivars, were studied. In physical characters, variability was more in seed weight (7.8%) than water absorption capacity (2.65%). In case of proximate composition, highest variation was observed in protein content (8.61%) whereas lowest was recorded in carbohydrate content (1.75%). As regards mineral, CV values varied from 32.07% in iron content to 5.62% in phytic acid content. Correlation between seed-weight and water-absorption capacity was significant (ta. 0.6548), whereas in case of carbohydrate and protein contents it was negatively significant (t--0.9827).
